But there is something else to be proud of here. Spectators can participate in responding to climate change by eating food with a reduced carbon footprint. The Seoul Birdie store I visited that day was selling foods with an ‘A’ next to the menu such as the ‘Mushroom Pad Burger ‘, ‘Spicy Turkish Kebab ‘, and ‘Eggplant & Mushroom Katsu Rice Bowl’. Ian Green, Seoul Birdie’s chef, explained, ” We got our carbon footprint certified by an external evaluation agency called Foodsteps .” The food packaging is also made of recyclable or easily decomposable materials.
The Tottenham Hotspur Stadium, where Son Heung-min plays, has consistently been selected as the Premier League’s greenest club by the Sports Positive Summit every year. Sport Positive, an organization supported by the BBC and the United Nations ( UN ), is an organization that promotes climate action, sustainability, biodiversity, and environmental justice through sport, and holds the Sports Positive Summit every year in collaboration with the United Nations Framework Convention on Climate Change ( UNFCCC ) and the International Olympic Committee ( IOC ).
“Not only Tottenham , but also other Premier League clubs in England are making a lot of efforts towards sustainable management,” said Clair Poole , founder and CEO of Sports Positive . “Sports are also receiving positive reviews for the transition to renewable energy, ecological diversity, and coexistence with local communities.”
The Tottenham Hotspur Stadium, which opened in April 2019, was built with sustainability in mind from the start. The same equipment and materials from the previous home stadium, White Hart Lane , were used to lay the foundation.
The most notable part is that 100% of the electricity used in the stadium comes from renewable energy. Marcus Parry, Tottenham Hotspur ’s head of sustainability, explained, “We are purchasing green-certified electricity through a power broker,” and “We are also looking into installing solar panels to produce our own electricity in the future.”
The electricity and heat required for beer production are also 100% generated from renewable energy. A Beavertown official said, “The water used to make beer is also sourced sustainably, and the waste from the brewing is used as livestock feed.”
Tottenham Hotspur’s trash cans are only divided into two categories: recycling and general use. This is different from Korea, where recycling bins are divided by purpose. Manager Marcus explained the reasoning by saying, “If we divide them too finely, it could discourage spectators from separating their waste.” Stadium waste is collected and recycled by waste disposal specialist Veolia . Tottenham Hotspur Stadium recycles 2.5 million cups every year.
